Coffee is best kept dry, cool, and away from light.
Excessive exposure to air and humidity will be bad news for your bag of coffee, as it accelerate the rate of oxidisation and its tasting notes.
You've probably noticed that our bags are re-sealable and have a one-way valve. One-way valves are great little tools that prevent air from entering the bag but, allow for CO2 that's being gradually released from the coffee (de-gassing) to exit from the bag, preventing your bag from bloating up and potentially exploding(!).
If you have an air-tight container which you would like to transfer your previous coffee into, feel free to do so! Air-tight environments will help maintain the coffee's lifespan.
Remember, so long as you keep your coffee somewhere dry, cool, and dark.
Best consumed within 3 months of roast!
