Your grind size should be changing according to the brew method, and your coffee, in order to get the best out of your coffee. Part of the joy of brewing and grinding your own coffee is fine-tuning your parameters to find the best balance and optimal extraction.
While there is no one 'perfect' grind, we'll usually work on ranges.
In general:
- Extra Fine grind sizes, texture similar to flour, are ideal for Espresso machines
- Fine grind sizes, texture similar to fine table salt, are ideal for Stovetop brewers
- Medium - Fine grind sizes, texture similar to sand, are ideal for most Drip brewers
- Coarse grind sizes, texture similar to kosher salt, are ideal for Immersion brew methods, such as Cold Brew or French Press.
Some brewers such as the Aeropress are able to utilise a wide range of grind sizes, from Coarse to Fine, thanks to it's innovative form of brewing.
Once in the desired range, your grind size adjustments should be ultimately adjusted according to your taste.
For diluted or under-extracted brews (overly sour), you can look to grind finer, in order to increase your surface area and extraction.
For harsh or over-extracted brews (overly bitter), you can adjust your grind to be coarser.
